1 Cup EUREKA MILLS cake wheat flour
95g WAZOOGLES Supernatural Oats – Cinnamon Banana Bread
½ cup HEALTH CONNECTION rolled oats
1 ½ tsp NOMU baking powder
1 tsp baking soda
3 large very ripe bananas
2 tsp NOMU vanilla essence
½ cup CREDE organic coconut oil (melted)
2 I LIKE EGGS large free range eggs
½ cup CHALONER Wild Blossom raw honey
1 LINDT 70% Cocoa Dark Chocolate or LINDT Extra Creamy Milk Chocolate
A pinch of sea salt
Method:
- Preheat the oven to 165 degrees Celsius and grease a 9x5 inch loaf pan.
- In a large bowl, whisk together the oats, flour, baking soda, baking powder and salt. Set aside.
- In another large bowl add the bananas and roughly mash them. The finer they are mashed the denser the loaf will be. Add the melted coconut oil, honey, vanilla, and eggs.
- Add the dry mixture in batches to the wet ingredients and mix well.
- Break the Lindt slab into small pieces and add 1/2 to the batter.
- Pour the batter into the loaf pan and sprinkle over the reminder of the Lindt chocolate. Bake for 50-60mins. Allow to fully cooldown before removing from the cake tin and slicing it.
