Who needs coffee when you have vodka? Say hello to the Boozy Strawberry Tiramisu of your daydreams.
Think finger biscuits soaked in a lemonade-strawberry Monin-Absolut Vodka concoction that is the right amount of sweet, spiked, and lip-smackingly moreish.
INGREDIENTS
- 250g strawberries, hulled and cut into small cubes
- 1 cups caster sugar
- 1 cup Absolut Vodka
- 1 teaspoon vanilla essence
- 2 1/2 cups creme fraiche
- 3 cups mascarpone
- 350g sponge finger biscuits
- 1/3 cup Lemonade
- 1/4 cup Absolut Vodka
- 1/2 cup Monin Strawberry Daiquiri Syrup
- Cocoa powder, for garnish
METHOD
- Place egg yolks, 1 cup sugar, 1 cup vodka and vanilla essence in a heatproof bowl.
- Whisk to combine, then place over a saucepan of gently simmering water (don’t let the bowl touch the water) and whisk for 5 minutes or until thick and pale.
- Cool to room temperature, then add creme fraîche and mascarpone, and whisk until combined. Lastly, fold in the diced strawberries. Set aside.
- In a separate bowl, add lemonade, Monin syrup, and vodka together.
- In either a large serving dish or individual glasses/bowl, add a layer of the cream mixture to the base. Dip the biscuits in the strawberry-vodka liquid. Place on top of the mascarpone mixture and repeat.
- Finish off with a dusting of cocoa powder and chill for 2 hours before serving. Enjoy!
