INGREDIENTS
For the filling
- 2 medium apples, peeled & diced apples
- 1 teaspoon ground cinnamon
- 2 teaspoons pure vanilla extract
- 30ml-60ml Fireball Salted Caramel Liqueur
- 1/2 cup granulated sugar
For the coating
- 3 tbsp cream
- 1/2 cup store-bought salted caramel for drizzling
METHOD
Cook the filling:
- In a medium saucepan over medium heat, combine apples, cinnamon, vanilla, Fireball Salted Caramel Liqueur, and sugar.
- Stir constantly for 5 minutes. Reduce to low heat and simmer for another 5 minutes or until thick and syrupy. Remove from heat and let cool.
Prepare the pastry:
- On a lightly floured surface, cut the puff pastry into 8 equal squares. Add a dollop of the cooled apple mixture to one half of each square.
- Fold over into a triangle and seal the edges with a fork.
- Use scissors or a sharp knife to make two small slits on top to allow steam to escape.
- Place on a lined baking sheet and refrigerate for 10–15 minutes.
- Preheat the oven to 205°C.
- Brush the tops with cream (or egg wash for extra gloss) and bake for 25 minutes, or until golden and puffed.
- Cool for 5 minutes on the tray, then drizzle generously with salted caramel sauce. Serve warm, preferably with more Fireball! 😉
