INGREDIENTS

For the filling

  • 2 medium apples, peeled & diced apples
  • 1 teaspoon ground cinnamon
  • 2 teaspoons pure vanilla extract
  • 30ml-60ml Fireball Salted Caramel Liqueur
  • 1/2 cup granulated sugar

For the coating

  • 3 tbsp cream
  • 1/2 cup store-bought salted caramel for drizzling

METHOD

Cook the filling:

  1. In a medium saucepan over medium heat, combine apples, cinnamon, vanilla, Fireball Salted Caramel Liqueur, and sugar.
  2. Stir constantly for 5 minutes. Reduce to low heat and simmer for another 5 minutes or until thick and syrupy. Remove from heat and let cool.

Prepare the pastry:

  1. On a lightly floured surface, cut the puff pastry into 8 equal squares. Add a dollop of the cooled apple mixture to one half of each square.
  2. Fold over into a triangle and seal the edges with a fork.
  3. Use scissors or a sharp knife to make two small slits on top to allow steam to escape.
  4. Place on a lined baking sheet and refrigerate for 10–15 minutes.
  5. Preheat the oven to 205°C.
  6. Brush the tops with cream (or egg wash for extra gloss) and bake for 25 minutes, or until golden and puffed.
  7. Cool for 5 minutes on the tray, then drizzle generously with salted caramel sauce. Serve warm, preferably with more Fireball! 😉
